Yeah one needs to enter the folders and try to read out the addon from the install.rdf
Btw. if you don't find the lightning addon there then the one that is shown in thunderbird is actually the one we provide with our packaging.

Ha, SOLVED it. Isn't it funny how sometimes a solution is really obvious, but only after you eventually solved it! I wish i'd thought of this hours ago.
All i had to do to remove that "jammed" Lightning add-in, was to close TB, uninstall xul-ext-lightning, reopen TB & confirm that now there was no Lightning there [in add-ins], close TB again, reinstall xul-ext-lightning, reopen TB & confirm that now the "proper" Lightning is there & working fine. Yay!! None of the past several hours of hassle have explained WHY my TB upgrade initially had NO Lightning. If it had, i'd never have bothered manually installing the add-in, which then lead to the rest of the mess only just now fixed. Sigh.
